Job Title:                                Lead Cook/Sous chef

Department:                           GUEST SERVICES

 

Position Summary:

Perform a wide variety of duties as outlined in the Carnation Farms’ Culinary Mission of promoting a sustainable food system that is focused on the use of locally sourced ingredients to create fun and healthy meals for our campers, families, staff, volunteers and donors. This includes, but is not limited to, leading a food preparation and service team consisting of staff and volunteers, meal set-up, service, and cleanup, as well as other tasks assigned by Carnation Farms’ management. This is a part time/full time seasonal position that requires the individual to work a flexible schedule. Considered candidates will have a passion and interest in food, sustainability and nutrition.

Reports to:                                         Executive Chef 

 

Responsibilities:

  • Meal preparation set up and service
  • Qualified to be the Serv Safe Certified lead
  • Assist in the monitoring of food and kitchen supplies
  • Assist in monitoring kitchen facilities for maintenance and repair
  • Ability to work in a fast paced environment
  • Lead staff and volunteers in meal prep and cleanup
  • Provide support in other departments as directed by Carnation Farms’ Management
  • Shift closing/clean up
  • Inventory

 

Skills and Experience:

  • Experience preferred in a commercial culinary role (catering or restaurant)
  • Food Safety
  • Advanced knife skills
  • Butchery
  • Managing a kitchen team

 

Education:

  • High School degree or G.E.D.
  • Formal culinary education or apprenticeship preferred

Should have knowledge of and/or experience in:

  • Advanced knife skills
  • Ability to problem solve when facing tough situations
  • Showing up on time, prepared and equipped to work.
  • Understanding the importance of maintaining the integrity of products
  • Communicating effectively with the Executive Chef about timing, product issues and knowing when “you are in the weeds”
  • Culinary terminology
  • Proficiency in a wide range of culinary techniques and cooking methods
  • General knowledge of global cuisine
  • Ability to accurately identify ingredients
  • Basic garden/farming knowledge
  • Basic nutrition/dietary restrictions
  • Food preparation, presentation and serving
  • Perform as a lead, working with staff and volunteers
  • Willingness to admit mistakes and approach Executive Chef for solutions and guidance
  • Ability to get along with others, such as fellow employees, volunteers, and campers
  • Requires working a flexible schedule to include holidays and weekend work, either morning or evening shift
  • Organizational skills/Cleanliness
  • Ability to follow directions and/or recipes to the specifications as outlined by the Executive Chef
  • Ability to work independently and self-manage, often with little direction
  • Ability to multi-task and work with a sense of urgency
  • Ability to practice safety and sanitation, avoid cross contact and/or cross contamination as well as proper cooling methods

 

Certificates/Licenses/Registrations:

  • Food handlers permit
  • ServSafe Certification preferred
  • Valid driver’s License
  • Immunization record
  • Current CPR and First Aid (provided)
  • Background check

 

Working Conditions: (percentages are approximations)

  •  90% in camp/business activities
  •  10% in onsite projects

 

Physical Demands:

  • Able to  lift, carry, push and pull up to 50 lbs. frequently
    • Standing up to 8 hours per day
    • Work in a fast paced environment
